Weekly Meal Plan: Late Summer Edition

A lot of you had been asking me to do meal plans for a while and so I sent out the first one last month and I was completely blown away by the reaction. I’m so pleased it’s proving to be a helpful thing and I’m excited to bring you this next one. Being Late Summer, or the height of Summer depending on how you look at it. Weather wise, is it Winter? But I digress. However you look at it, we are in August and so we’ve got tomatoes, courgettes (zucchini), and aubergine which are all delicious right now. Cooking with what’s in season is the easiest way to become a better cook in the blink of an eye. Everything is at its best and needs you to do the least to it to make it taste fantastic.

The recipes

Aubergine, Tomato and Chilli Pasta with Whipped Ricotta

Because sometimes at the end of a long day, only a gorgeous bowl of pasta will do.

Sesame Crusted Seared Tuna with Chilli Coriander Pesto

It’s been swelteringly hot this week and this is all I’ve been craving. I am not built for heat and I’ve been wilting in the kitchen so the idea of an (almost) no cook recipe is beyond appealing to me and I hope to you too.

Red Thai Coconut Pork and Courgette Meatballs with Smashed Cucumber

This dish is perfect for in-between weather - it's a little summery and light with the courgettes grated into the meatballs - but it warms from the inside out on days when it feels like the rain will never stop.

Slow Cooked Courgettes with Easy Parmesan Orzo, Crispy Chicken and Ricotta

This is the most delicious dish I've eaten for a long time. Oh it’s a little indulgent but it’s basically Winter in July, so I think we’ve earnt a little indulgence, haven’t we?? Courgettes are in season and that’s reason to celebrate, I love courgettes.
