This can all be prepped in advance which makes it a great thing to serve friends when they are coming over. Just get everything mixed, chopped and seared and then when you’re ready to serve you can assemble it. Everything is nicest here when it’s at room temperature so if you pop it in the fridge just make sure you take it out 20 mins or so before you want to eat.
Wasabi powder
I didn’t actually use this this time as I didn’t have any when I came to make this but back in the day I would add a pinch of wasabi powder to the sesame seed mix and it was so good! But it is an expensive ingredient and I’m not sure I have that many other suggestions for how to use it, so it’s not really a “Dinner Tonight” ingredient. But if you have some definitely use it! Just adds a lovely gentle heat.
You have left over coriander pesto, what can I do with it?
You lucky thing! Drizzle it over a simply cooked steak and prepare to swoon. Serve with grilled chicken breast, crispy potatoes and garlicky yoghurt. Spread it on sandwiches or serve with pan seared salmon steak and some simply cooked rice. It’s a really good drizzle on just about anything.
Use the best tomatoes you can
When things are simple, there’s no place to hide. So you want to use a really ripe, juicy tomato here. They are at their best right now so that does a lot of the hard work for you.
Play around with the garnishes and use what you have!
This would also be lovely with avocado. Don’t like radishes? No problem, leave them out. Baby sugar snap peas, sliced in half are gorgeous and have a lovely crunch. You could add daikon, or pickled ginger, or julienned carrot. Sliced pear or pickled jalapeño. Really the world is your oyster. I love a bit of crunch so I always add crispy onions, but if you don’t want to buy them just sizzle some yourself - I would thinly slice shallots and then fry in a little oil. Crispy fried garlic would also be great.
But Margie I hate coriander!
Okay! You can use basil instead in exactly the same way or a combination of herbs would be very nice. I’m thinking finely sliced chives, some parsley and a little dill? Lovely.
Sesame seeds
You can buy both black and white sesame seeds from most places but if you can only find one, that’s fine, don’t stress. I love the combination of both and it also looks really pretty but it will also be good just with one or the other. Seasoning the sesame seeds is important as you want the crust to be flavoursome and delicious. If you are doing lots of tuna at a time, I tend not to do more than two at a time so I can keep an eye on how long each side has been cooking for. The sesame seeds do have a tendency to burn quite easily so you might need to wipe the pan out with some kitchen paper before you start again with the next batch. That’s very normal so don’t panic if you have to do that.
