Creamy Sausage and Leek Pasta

A brilliant weeknight supper - all you really need is a packet of sausages, and you can cobble the rest together from the fridge and cupboards. The leeks are an underrated addition, and the crème fraîche makes it creamy yet somehow light.

Method

Turn cooking mode on

Step 1

Heat a large frying pan over medium-high heat. Add 2 tbsp olive oil, then the sausage meat (if using sausages, remove the casings first - keep them fridge-cold, run a knife down the length and peel). Break apart with a wooden spoon. Don't season if using sausages (already seasoned); season plain sausage meat. Fry until golden and crispy, almost mince-like, 5-7 minutes.

Notes

For children
My girls love this pasta.

Make it veggie
Works well with veggie sausages - break them apart and fry in olive oil.

Pasta shape
Use whatever you like - penne deserves more love, and orecchiette scoops up the sauce nicely.

Crème fraîche
Any creamy product works - mascarpone, cream cheese or double cream (more luxurious).

If you can't use wine
Add about 100ml stock with a splash of balsamic vinegar or a squeeze of lemon for acidity. (Tip: freeze leftover wine in a ziploc bag - the alcohol stops it freezing solid, so you can break off chunks for cooking.)

Leftovers
Keeps in the fridge for 3 days. Reheat in the microwave for 1-2 minutes, or in a pan with a splash of water or knob of butter.

That's so funny about penne! Maybe it's a British aversion? Lol. I'm in Boston with a heavy Italian population, and penne is one of the most popular shapes in this area! People can't get enough of it. :D
