A note on greek yoghurt: swap for sour cream, creme fraiche or plain yoghurt.
Herbs: this would also be delicious with a sprinkle of fresh basil, parsley or chives.
For the salmon: this would be lovely with a little Boursin spread on the salmon before baking, or a little bit of dijon mustard - gorgeous!
Make it spicy: Add a sprinkle of chilli flakes to the salmon and/or potatoes.
If you want to double the recipe: double everything and follow as normal.
Vegetables: you could swap the asparagus for:
What to do with leftovers: You can keep any leftovers in a tupperware in the fridge for a few days. Reheat in the microwave and then serve with the sauce. If you only have leftover sauce, this is great in sandwiches or as a dip. Or as a dressing, thinned out with a little olive oil and lemon juice.
