You will have leftover pesto
So many delicious things you can do with it. My children love pesto pasta, as do I, so this would be a great way to use it up. Throw in some peas and broccoli and maybe some crispy pancetta. So yum. Pesto is also amazing drizzled over roasted vegetables and tossed with feta and rocket for a very easy and delicious salad. Smother it on a rectangle of puff pastry and top with mascarpone and cherry tomatoes before baking in the oven for a very delicious and easy tart. It also freezes well so if you want to you can pop it in the freezer.

Make this recipe even easier:
Use store bought pesto. Opt for the kind you get in the fridge not on the shelf. Always taste it before you serve it, can you add anything to make It sing? A little more parmesan? garlic? black pepper? a top up of good quality olive oil.

How to make this so your children will eat it too:This is very child friendly! Maybe a little less garlic as children can find it spicy (or is that just mine?!) I might not plate theirs up the same way with the pickled red onion but they would have everything else. Probably with ketchup and / or mayo for dipping the potatoes into… I might steam some broccoli or peas to go with.

If you want to double the recipe, here’s what to do:I would double the chicken, potatoes and marinade but keep the amount of pesto, and red onion the same. I normally allow for 2 chicken thighs per person if they are a good size. But portion sizes are hard to give hard and fast advice on as people’s appetites are so different. My husband would easily eat 3 but some friends would be happy with one. So I will leave it up to you. Having leftover cold roasted chicken is never a hardship in my eyes so always over cater then under.

Can’t find baby potatoes?
No problem! You can use bigger potatoes you will just want to cut them up quite small - smaller than you would with roast potatoes as aren’t par boiling these first. So more like little dice and that would work really well.

Vegetarian:The potatoes could be the star of the show, I might be tempted to add in some chopped carrots - purple and orange ones for fun. Roast it all together and serve in the same way with a little crumbled feta and some pomegranate seeds.

What can I serve with this?I love it as it is. But to up your greens serve with a side of broccoli or crisp green salad.

What to do with leftovers:I would strip the leftover chicken and use it the next day for sandwiches or salads. Leftover potatoes would make a lovely potato salad.
