Spicy Salmon Bowls

This is my go-to weeknight supper at the moment. I love this kind of dish where it’s a jumble of delicious things somehow when served together they become even better. It’s so simple, very quick and easy and feels healthy and light but also satisfying. What more could you ask of a recipe?

Veg
I also love a bit of sautéed spinach that’s been lightly fried with a little crushed garlic, roasted tender stem broccoli also is very good, grated carrots, garlicky mushrooms - you get the idea, use what you have to hand - once you have the rice and the salmon and the sauce, you can build out your bowls however you like!

Rice
I often use the microwaveable pouches which are so easy and so good and means this can be on the table in less than 10 mins. As mentioned in the introduction I’m also obsessed with our rice cooker, it’s so easy to use and means you have perfectly cooked warm rice just waiting for you when you come through the door. These bowls are also great with brown rice, or any rice you fancy.

Toppings
The garnish I’ve suggested here is just that, a suggestion. If you cant get your hands on jalapenos, don’t panic! If you don’t like avocado, just leave it out. Use whatever you have. Crispy crunchy chilli oil is a great addition to these bowls as are crispy or pickled onions. Those three things work on just about anything and somehow just make them so much more delicious with very little effort.

If you opt for sushi grade fish or the smoked salmon, some pickled ginger is an amazing addition. You can buy it in the Japanese section at the supermarket and you’ll find yourself eating it with so many things.

Spice rub
This blend is v good. If you don’t have everything that’s okay, follow the rough formula and you will be okay. I don’t normally suggest buying a whole load of things you dont already have but I do find these are the spices I tend to use the most so if you were to buy them I guarantee you will get good use out of them. This spice rub works really well with chicken, prawns or tofu.
