Weekly Meal Plan: February Edition
Spring is in the air! The days are getting longer here in the UK and it’s no longer pitch black when my daughters wake me up in (very) early hours of the morning. After what feels like 409,000 days of rain, things are feeling a little brighter over here! So to celebrate let’s make your life a little easier with these 5 delicious suppers. There are so many goodies in this months meal plan. All can be adapted to suit the whole family if you’re cooking for a crowd and all have notes on substitutions and how to make the recipes work for you, as always! Due to popular demand, the PDF I give you with the shopping list now also has the recipes on it too, so you have everything in one place to make this week even easier. And then supper is just one less thing to think about! If you’re a paid member you’ll find this right at the bottom of this if you just keep scrolling.
Crispy Pancetta Spaghetti alla Vodka with Rocket, Shaved Fennel & Parm salad
This is my idea of a pasta salad. And actually my favourite way to eat spaghetti. A hot bowl of rich and creamy spaghetti scooped into a bowl and topped with a handful of sharp, peppery salad.

Garlic Parmesan Chicken Skewers with Roasted Red Pepper Giant Couscous
These chicken skewers are so good served with pretty much anything. If you’re in need of comfort, opt for creamy mashed potato. Or if you want to keep things simple, they are gorgeous with a crisp green salad.

Lamb Chops with Creamy Beans and Salsa Verde
If you’re looking for a speedy supper I think sometimes it’s hard to beat lamb chops. They are so quick and easy to cook but we don’t cook them often enough! This combination with the creamy beans and zingy salsa verde is a favourite.

Buttery Chive Dutch Baby with Smoked Salmon and Crème Fraîche
A Dutch Baby is basically a cross between a Yorkshire pudding, a pancake and a soufflé. And yes, it’s as delicious as it sounds. Buttery, eggy perfection.

Super Green Orzo with Garlicky Mushrooms and a Poached Egg
This super green orzo has all the creamy, lusciousness of a risotto without any of the faff. Super quick and easy, this whole dish is ready in less than 15 minutes.
