Lamb
Make sure it’s at room temperature before you think about cooking it. For the marinating time, if you can give it 5 minutes, it sounds like such a small thing but it really will make a difference to the flavour of the finished dish. If you remember, and are an organised sort of person you could do it the night before and really let the flavours sing together overnight.
Cooking times:
A rack of lamb can take 15–30 minutes to roast, depending on how you like it but here is a rough guide. I have my oven at 180c fan.
Very pink: Roast for about 15 minutes
Medium rare: Roast for about 20 minutes
Medium/well-done: Roast for about 25 minutes
Well done: Roast for about 30 minutes
Beans
I love this with cannellini beans as they go the creamiest. You can also add a dollop of creme fraiche which is very nice but not strictly necessary.
Save a little time..
You can make life easier and use a drizzle of pesto here if you want a shortcut. The flavours would work really well and you can definitely use store bought for this. Just always opt for the fresh kind, not the jar kind. Having said that, the combination of beans, lamb and garlicky tomatoes is excellent and you may not feel you need an extra sauce - in this case just drizzle the garlicky tomatoes over at the end as a sauce and add a sprinkling of herbs as a garnish.
