Heat 1 tbsp olive oil in a frying pan over a low heat. Add 1 red onion, finely chopped, and cook gently until softened - about 10 minutes.

Notes

Choice of fish
Use any fish you fancy - salmon, sea bass and cod all work. If you aren't a fish fan, crispy skin-on chicken thighs are delicious instead.

The grains
Merchant Gourmet do a brilliant variety of pre-cooked grains and pulses - the Tomatoey Puy Lentils and Quick Cook Spelt are also great.

Cooking fish
Sea bream is delicate, so treat it gently. Get the pan really hot, then finish on the other side for the final minute. It's usually done a moment before you think - as soon as it's opaque and flakes easily, take it off the heat. For something more forgiving, use a thicker fillet like salmon.

Make it spicy
Add a few dried chilli flakes with the grains for a little heat.
