Easy Garlic Butter Steak Bites with Creamy Parmesan Mashed Potatoes

Peel and chop the potatoes, place them in a large saucepan, cover with cold water, and salt generously.

Notes

Make it spicy
Add dried chilli flakes or finely chopped fresh chilli with the garlic in the melted butter.

Other meats
Works with prawns or chicken - just cook chicken longer until fully cooked.

Serving suggestions
I've served with creamy mash, but gnocchi, creamy polenta or pasta work too.

Dry the steak
Pat the cubes dry before seasoning - surface moisture steams the meat instead of searing it.

Avoid tough steak bites
Don't overcook or overcrowd the pan. Cook in small batches, err on the side of under-done (it keeps cooking as it rests), and slice against the grain.

Leftovers
Keep in the fridge up to 3 days, but only if needed - reheating overcooks the steak. If you must, flash-fry in a very hot pan for 1 minute.
