Easy Sheet Pan Gnocchi with Tomatoes and Burrata

For nights when the thought of cooking is just a bit much. It takes about a minute to get everything on the tray - no chopping - then 25 minutes in the oven. The tomatoes blister and burst into a gorgeous simple sauce, and roasted gnocchi goes crispy and golden without any boiling first.

Method

Turn cooking mode on

Step 1

Preheat the oven to 200C/180C fan. Add the cherry tomatoes, gnocchi and whole unpeeled garlic cloves to a baking tray. Add the olive oil, salt and pepper and balsamic vinegar, and shake the tray so everything is coated. Roast 25-30 minutes until the gnocchi are golden and the tomatoes soft and bursting.

Notes

Cheat's burrata
Mimic burrata's creamy interior by stirring 150ml double cream into a torn ball of mozzarella with salt; leave 30 minutes.

Whipped ricotta alternative
Mix 2 heaped tbsp ricotta with the zest of 1/2 lemon, 20g parmesan and seasoning.

Mascarpone
A tablespoon stirred through the tomatoes in the pan is also delicious.

Optional
Add a few dried chilli flakes for a little heat.

Variations
A great canvas - add roasted veg (aubergine, red pepper, courgette) on the tray, or crumbled sausage meat, or crispy pancetta on top.
