Pork Chops with Creamy Dijon and Leeky Beans

I think a lot of people are nervous about cooking pork chops, but they are the ultimate quick weeknight dinner. Seasoned simply, basted in a little butter, and served alongside these creamy Dijon and leeky beans, they feel a bit fancy while taking almost no time at all.

Made this tonight and was very yummy. Added some extra cream and finished the chops off for a couple of minutes in the sauce. Added new potatoes and green beans for serving. Wish I’d got better browning on the pork but it tasted delicious. Saving the rest of the bean sauce for salmon tomorrow x
