Brown Butter Scorched Peaches with Parma Ham and Mozzarella

Here’s another no recipe recipe. Come the Winter months and I’d be far more likely to want something a little more substantial for dinner. But in the Summer, even if it’s not as warm as usual this is just the sort of thing I crave. This really is a sensationally good combination and while peaches are in season, I’m making the most of them and eating them in as many ways as I can.

Slice the peaches in half and remove the stone. Cut into wedges.

Notes

- This would also be gorgeous with a little balsamic drizzled on the top. - Some hot honey would also be a great addition, simply melt together honey with a pinch of dried chilli flakes and drizzle it over. Heaven! - Ricotta would be lovely instead of the mozzarella, and of course you could use burrata. - I also love using basil leaves as a salad leaf, so you could switch out the rocket for basil and that would be very lovely too. - Really ripe figs would be great in addition to or instead of the peaches. - Incidentally, these brown butter peaches are gorgeous on their own with a scoop of vanilla ice cream and some toasted sliced almonds. Makes the simplest pudding but it’s so so good. Make sure you use enough butter so you have some to drizzle over it and I tend to do my peaches in half if I’m doing this. Or sliced brown butter peaches are incredible on a rice pudding with plenty of cream.
