Notes

For the rice
I like sticky rice and I often cheat and use the kind you can pop in the microwave, it comes in little containers that you pierce with a knife and in two minutes it’s just perfectly cooked rice. Sticky rice seems to have me in a bit of a chokehold but I also love this with sushi rice, or any rice of your choice really. If you do use sushi rice - cook about 75g for 2 people according to the packet instructions and then mix together 3 tbsp rice wine vinegar, 1 tbsp sugar, big pinch of salt and about 1 tbsp boiling water from the kettle. Stir to dissolve the sugar and salt and then then pour it over your cooked rice. Fluff it with a fork and stir it in. So delicious!

Chilli crisp
Chili crisp is an oil speckled with dried chillis, onion, garlic, and other spices. You can find it online very easily, or in the Asian section of the supermarket. I love the brand White Mausu and I love the peanut rayu. If you cant find chilli crisp, you could use any chilli oil and add as much or as little as you like. Or I have to say, the cucumber is still very good with the garlic, a little soy sauce, salt and pepper and olive oil. Add some cubes pop avocado in there and a little feta. So good!

Vegetables
Really you can use what you want - steamed broccoli, edamame, avocado, cucumber, green beans. Strips of very thin carrot would be lovely too, and radish. Not a vegetable I know, but I also love with some crumbled feta on the top.
