Weekly Meal Plan: Summer Edition

Due to popular demand, today I am bringing you the very first edition of the Dinner Tonight Meal Plan series. This is a five-day meal plan using Dinner Tonight recipes to lighten your load one week of this month. This meal plan is light and fresh. I’ve put together a week’s worth of dishes that feel Summery and are basically exactly what I feel like eating at this time of year. Oh and they are all easy, because that’s what we want at the end of a long day isn’t it? In true Dinner Tonight style, these can all be cooked in less than 30 minutes. Summer cooking is possibly my favourite kind of cooking - so much delicious produce to use. And always remember, the better your produce, the less you actually have to do it to make it taste amazing. I love a lovely salad for supper in the Summer, gorgeously light fish dishes, Summery pastas and most importantly quick-cooking recipes so you aren’t tied to the kitchen. This meal plan has it all.

The recipes

Quick and Easy Spring Pasta with Lemony Ricotta and Brown Butter Asparagus

Sometimes only a gorgeous bowl of pasta will do. And a dish that comes together in the time is takes for the pasta to cook is always a good idea on a weeknight.
