Lightly Spiced Lamb Meatballs with Muhammara, Feta and Herby Cous Cous

I know when you think of easy, low effort meals, meatballs might not be the first thing to spring to mind. But trust me, these couldn’t be easier, and it’s only a little bit of mixing and rolling that’s required to make the meat balls.

Method

Turn cooking mode on

Step 1

Heat a pan over a low heat. Add the spices to the pan then toast for 2-3 mins until fragrant. Then crush using a pestle and mortar.

Notes

Alternative serving suggestions
These are so good served in a flatbread wrap with some tzatiki, some pickled red onion, maybe a little herby, buttery rice. Or ditch the wrap and have a rice bowl with the same ingredients, plus roasted aubergine. The cous cous could be switched for lentils, giant cous cous, bulghur wheat, or orzo. All of these would work well with the muhammara and yoghurt combo. Switch the feta for labneh or ricotta, both so good. Or use the meatballs and serve with orzo or mashed potato and a rich tomato sauce made simply with shallots, tomatoes, lots of garlic and torn basil.

If you want to add some green vegetables, tender stem broccoli or green beans tossed with some olive oil, lemon juice and lots of salt and pepper goes really well. Or sauteed garlicky spinach, cavolo nero or courgette also v good options. You could also finely chop some baby spinach and stir it through the cous cous
