Turn cooking mode on
Step 1
Simply mix together the mince, ricotta, garlic, parsley, parmesan, egg yolk and breadcrumbs. Season well with salt and pepper and the chilli flakes. You want to mix it well and squish it together well. The ricotta is soft and we don’t want these meatballs to fall apart so you want to be quite firm and make sure the meatballs are compacted.

Don’t have mince?
For ease I normally just use mince as it’s so easy to buy. And I find myself often choosing chicken or turkey but when I make them with pork I always vow to make them with pork again next time. Anyway, if you can’t find mince, you can of course just blitz the meat in a food processor - add all the ingredients and blend to make a bit of a paste which you then roll into balls. For example, I think this amount of mince would probably be the equivalent of about 6 boneless, skinless chicken thighs.
Polenta
Very important to look at your polenta packet and see which kind you got. Hopefully the quick cook kind as then it will only take about 5 mins. But regardless, I always use a mix of milk and stock as it just makes it the most flavourful. Season it well and add butter and parmesan at the end (or a cheese of your choice). Honestly if you’re on the fence about polenta or just haven’t had it for a while, give it another chance because it’s so convenient and really truly very delicious when cooked right.
What else could you serve it with?
I am obsessed with the combination of meatballs, tomato sauce and buttery rice. It’s so good - maybe it’s a childhood thing but I love it so much and this works beautifully with rice. See also: mashed potato. Cauliflower mash would also be lovely as would any kind of spaghetti. Or I have to say sometimes I have a bigger portion of the meatballs and tomato sauce and have it with some roasted broccoli or sautéed greens. Also very good.
