Crispy Lamb Bowls with Hummus

Quite possibly the most delicious dish I've made in a long time - astonishingly good and yet so simple.

Turn cooking mode on

Step 1

Preheat the oven to 200C/180C fan. Add the aubergine, cherry tomatoes and drained chickpeas to a baking tray. Sprinkle 1 tsp paprika over the chickpeas, drizzle over 3 tbsp olive oil and season. Roast for 25-30 minutes until the tomatoes are bursting and the aubergine is soft and golden, stirring halfway (add a little more oil to the aubergine if needed).

Notes

Lamb alternative
Swap lamb for beef or pork mince, or use chicken or turkey mince for a cheaper, lighter option.

Hummus
Store-bought is fine, but homemade is easy: blend a jar of good chickpeas with 2 tbsp tahini, 2 tbsp olive oil, a small garlic clove, a squeeze of lemon and salt. Add an ice cube for extra creaminess.

Roasted vegetables
Use any veg you fancy - courgette, red onion, carrot, sweet potato or cauliflower all work well.

The spices
Play around with Middle Eastern / Mediterranean spices - cinnamon, nutmeg, fennel seeds, dried oregano or mixed herbs.
