Turn cooking mode on

Step 1

Pour the chicken stock into a large heavy-based pan over medium heat. Add the onion, tomato, lemongrass, lime leaves, chilli paste, fish sauce and lime juice. Bring to the boil, then reduce and simmer gently for 15 minutes to infuse.

Notes

Herbs
Not a coriander fan? Swap for parsley, Thai basil or regular basil, or leave it out.

Chilli
I leave the seeds in as I like it spicy - deseed if you prefer, or omit.

Noodles
Make it more substantial by adding dried noodles - rice, egg, wholewheat, buckwheat or soba.

Make ahead
Make up to the stage where the chicken is cooked, then cool, cover and chill for up to 3 days. Reheat to a simmer, then add the prawns. Don't cook the prawns in advance or they overcook on reheating.

Leftovers
Store in an airtight container in the fridge for up to 3 days and reheat until piping hot.
