Herby Green Chicken Thighs with The Best Courgette & Asparagus Giant Couscous Salad

This is such an easy summer supper. A protein and a salad is probably my favourite way to cook and eat and this is the most delicious combination.

Method

Turn cooking mode on

Step 1

Blitz the coriander, mint, garlic, chilli, lemon, yoghurt, olive oil and salt together until smooth. Pour ¾ over the chicken and marinate for at least 1 hour (overnight is even better). Save the remaining marinade for serving.

Notes

You can prep ahead of time and then just BBQ whilst the sun shines! Or the rain pours, in my case!

Of course you also don't need to do this on a bbq. You can cook the chicken on a grill pan or bung them in the oven - whichever is easiest.

I also have high hopes for being the kind of organised person that will get the chicken marinated the day before but ut never turns out that way, and the chicken is still delicious - so marinade for as long or as little as you have.

The salad keeps really well so make it ahead or look forward to any leftovers the next day

I’ve made this couscous twice now. Love the dressing that’s a bit different and cooking all the veg on the grill was so easy - hadn’t done spring onions like that before! The leftovers made a great lunch too.
