Variations
While to me this pie is perfect, you can if you of course change it to your will. Mushrooms (150g chestnut mushrooms, wiped and sliced or halved) would work really well, as would some crispy salty pancetta, which could fry at the start and add back in at the end. Or some chopped up Christmas ham would be very good too!
Leeks / Onions / Red Onions /Shallots they all work
You don’t have to use sweetcorn but my mama always has done and I really love the sweet freshness it lends to the pie.
Not using leftovers
Now if you wanted to make this and didn’t have any leftover roast chicken or turkey, you can of course start with raw chicken. I would use approx 6 boneless chicken thighs for this recipe, chopped into bite sized pieces and added to the softened leek and garlic and cooked for about 5 minutes before you carry on with the rest of the recipe.
Herbs
Tarragon and chicken are a match made in heaven but if you don’t like tarragon by all means leave it out. Some chopped parsley would be v good, dried oregano would also work well.
