Notes

If you want to double the recipe: double everything as above and on you go, although this should be enough romesco sauce for 4!

How to get your children to eat it too: I just serve the romesco on the side and do a side of veg for them.

How to make this recipe easier: you could use oven chips instead of potatoes.

What to do with leftovers: leftover steak (does that exist?) should always go in a steak sandwich in my opinion. Crispy bread, mustard, mayo, lots of rocket, steak - so so good. You can re-crisp the potato wedges in the oven or air fryer at 180c for 10 minutes. Romesco keeps well in a sealed jar/container in the fridge for at least 7 days. It’s great with roasted chicken with a nice crispy skin, stirred into white beans, or drizzled over rice and roasted veggies.
