Now here is the thing, I highly recommend you make this dish as it’s written as honestly it’s such a good combination and I think you are going to love it but I’m here to help. So…if you want to make your life even easier, I have to say that the roasted cauliflower alone with the cheesey garlicky marinade is really very good. Pop it in the oven, pour a glass of very cold white wine and serve with a crisp green salad. Total heaven and very very little work. Can a cauliflower really be classed as supper? Yes. Yes it can. Romesco There are lots of variations for how you can make this but I love this version. Some include breadcrumbs but I just don’t personally think it needs it. Can’t find blanched almonds? Well that’s okay , you can try normal almonds, hazelnuts or pinenuts…or a bit of a combination. Blanched almonds and pine nuts is also a very good combo. Roasted peppers From a jar or roasted yourself, I’m not going to tell you what to do but the most important thing is that they must be roasted and charred - that’s the key. You want the heady smokiness that comes from roasting peppers Sun dried tomatoes For the love of all things delicious DO NOT drain the oil from the sundried tomatoes down the sink. It makes the most gorgeous base for a salad dressing. Just scoop out the tomatoes and leave the oil in the jar. Perfect for dressings, marinades, so much flavour in that oil please don’t let it go to waste.
