One Pan Golden Chicken and Rice with Garlicky Tomatoes

Turn cooking mode on

Step 1

Preheat the oven to 200C/180C fan. In a bowl, mix the chicken thighs with 2 tbsp yoghurt, 1 grated garlic clove and the lemon zest.

Notes

Great for meal-prepping
Leftovers refrigerate well for a quick lunch.

Chicken thighs
Boneless thighs are quickest; bone-in takes longer. Chicken breast works too - sear for colour, don't overcook, and submerge in the rice; check at 15 minutes.

Feeding a family
A safe bet with children - leave off the garlicky tomatoes and herbs for them.

Make it veggie
Swap the stock for veg or bouillon, bake the rice the same way and scatter with feta, herbs and saffron yoghurt - or sticky honey halloumi.

Leftover tomatoes
The garlicky tomatoes make a delicious pasta sauce.

A note on rice
Basmati or long grain both work, no need to wash. Orzo works too.
