Step 1

Remove the steak from the fridge and let it come to room temperature before cooking. Take the steaks out of the fridge as soon as you get home from work, or at least 30 minutes before you want to start cooking. Make sure they are comfortably at room temperature before proceeding.

Notes

If you want to double the recipe: double everything as above and on you go, although this should be enough peppercorn sauce for 4!

Peppercorns: I used pink peppercorns since it’s Valentine’s Day and I think they look pretty but this is completely not necessary. Normal peppercorns from your pepper grinder is fine. You can also get green peppercorns in brine in some places which are a bit more herbal and almost citrus-y. Very good if you want to add a little zing!

How to get your children to eat it too: peppercorn sauce on the side and hopefully you have no problems! I serve with a side of veg they like.

Variations - you could also serve with bearnaise sauce or a chimichurri. - Instead of chips, you could serve with crispy roast potatoes or mashed potatoes even. - I love a sirloin or rib eye steak but use your favourite steak cut! You could also buy two smaller steaks rather than sharing one large.

How to serve: a side of crisp green salad or some green beans would be delicious. Creamed spinach of course too! Or just steak and chips on its own - can you go wrong?

How to make this recipe even easier: you could buy the peppercorn sauce but if you have never made it before, I do really recommend trying that as it’s so delicious homemade. But supermarket ones are great nowadays.

What to do with leftovers: leftover steak (does that exist?) should always go in a steak sandwich in my opinion. Crispy bread, mustard, mayo, lots of rocket, steak - so so good. Peppercorn sauce is also delicious with other dishes; you could serve with some roasted chicken thighs and mashed potato for an easy cosy meal.
