Summer Garden Pasta

This is a gorgeous no cook pasta recipe. It's the Summer Garden Pasta from Ina Garten. My mum used to make a very similar version when I was younger so it really takes me back, use the best tomatoes you can get your hands on. Prep time is about 10 mins, but you need to let the tomatoes sit for a few hours so don't be alarmed by the prep time listed, you aren't actively doing anything in that time but you do need to think a bit ahead!

Turn cooking mode on

Step 1

In a large bowl, combine the tomatoes, olive oil, garlic, basil, chilli flakes, Maldon flakey sea salt and black pepper. Cover and leave at room temperature for at least 2 hours.

Notes

Pasta - any pasta shape will work here really but I do love Angel Hair - it cooks in about 3 minutes so is actually the perfect pasta for a speedy weeknight supper

Tomatoes - I've used a mix of different coloured cherry tomatoes but any you have with work, cherry red, mini plum, sun gold. All delicious. If you only have larger tomatoes, I would peel them as they are so much nicer. Just score a cross in the tomato skin and leave in boiling water for 30 seconds and the skin should come away really easily.

Cooking for children - My children don't love garlic as they find it a little "spicy" - this recipe works with or without garlic so do as you think best
