Whole Roasted Fish with Crispy Smashed Potatoes & Greek Salad

I made this for my family on holiday in Greece, and it such a good combination of things - fresh, crispy, crunchy, creamy! If you’ve never roasted a whole fish before, please don’t be intimidated - I'll walk you through it and the oven does all the hard work anyway. Pop it in the middle of the table and let everyone help themselves.

My first time cooking whole fishes - was excellent - will be doing this more in the future. I didn't make the potatoes/greek salad as I had a bunch of veg and bubble & squeak that needed to be eaten, but the fish is so delicious cooked this way. Highly recommend trying this as opposed to just filets.
